White Bean Dip

1 (15 oz can) white beans, drained & rinsed

1/2 tsp dry parsley or 1/4 cup fresh flat leaf parsley chopped

2 tblsp fresh squeezed lemon juice

1 garlic clove, crushed

1/2 tsp each salt & pepper

1/3 cup extra virgin olive oil

In a food processor combine all ingredients except olive oil.  Pulse on & off until mixture is coarsely chopped.  With the machine running, gradually add the olive oil & process until creamy.  Season with more salt & pepper if desired.

Use as a dip for fresh vegetables.  This makes a very healthy high protein, high fibre snack that is dairy free & wheat free.
